  1. Start by rinsing your ripe but firm banana peels under cold water. Use a vegetable peeler or knife to remove brown spots and cut into strips.
  2. In a medium bowl, combine liquid smoke, soy sauce, and seasonings. Toss banana peel strips into the marinade and let them marinate for at least 10 minutes.
  3. While the peels are marinating, heat a skillet over medium heat with oil until shimmering.
  4. Add the marinated banana strips in a single layer to the hot oil. Fry for 5-7 minutes, flipping halfway through until golden-brown and crispy.
  5. For baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper, spread banana peels and bake for 15-20 minutes, checking regularly.
