  2. Using a cookie scoop or tablespoon, portion the mixture into balls, approximately 1 inch in diameter. Roll in your hands to shape, then coat with crumbled bacon.
  3. Cover the tray with plastic wrap and refrigerate for at least 30 minutes to firm up.
