For the Seasoning

  • 1 teaspoon Garlic Powder Fresh garlic can substitute to intensify aroma.

  • 1 teaspoon Black Pepper Freshly ground is preferred for best flavor.
For the Stuffing
  • 1 pound Lump Crabmeat Other types of crab meat can be used, such as jumbo lump or claw.
  • ½ cup Mayonnaise Greek yogurt or a plant-based mayo can be used as a substitute.
  • ½ cup Breadcrumbs Use panko or crushed crackers for different textures.
  • 3 tablespoons Chipotle Sauce Use adobo sauce from canned chipotles or hot sauce as alternatives.
For the Drizzle
  • 4 tablespoons Butter Substitute with olive oil for a lighter version.
  • 2 cloves Garlic Omit if using garlic powder in stuffing.
  • Lemon Juice Fresh lemon is best; bottled may be used if necessary.
  • 1 teaspoon Cilantro Chopped parsley or green onions can substitute.

Method
 

Preparation
  1. Begin by peeling and butterflying the colossal shrimp, ensuring you leave the tails intact for presentation.
  2. In a mixing bowl, combine the olive oil, garlic powder, Old Bay seasoning, sea salt, and black pepper. Toss the shrimp in this mixture until coated.
  3. In a separate bowl, whisk together the egg, mayonnaise, and chipotle sauce until smooth. Fold in the lump crabmeat and breadcrumbs.
  4. Take a tablespoon of the crab mixture and fill each butterflied shrimp. Press the tip back over the filling and secure it.
  5. Place the stuffed shrimp in a single layer in a skillet, ensuring they have some space between each piece.
  6. Preheat your oven to 375°F (190°C) and bake the stuffed shrimp for 20-25 minutes until shrimp is pink and filling is golden.
  7. Melt the butter in a small saucepan and add minced garlic. Cook for about 1-2 minutes until fragrant.
  8. Once baked, drizzle the garlic butter over the shrimp, sprinkle with cilantro, and add lemon juice.
