For the Chicken
  • 8 pieces Dark Meat Chicken Pieces drumsticks and thighs preferred
  • 2 tsp Kosher Salt adjust based on taste
  • 1 tbsp Smoked Paprika regular paprika can be substituted
  • 1 tbsp Montreal Chicken Seasoning or any favorite seasoning
For the Sauce
  • 2 tbsp Butter unsalted recommended
  • 1/2 cup Red Onion, minced shallots can be a substitute
  • 1/2 cup Flat Leaf Parsley, chopped can be omitted or replaced
  • 1 tbsp Garlic, minced garlic powder is an alternative
  • 1/2 tsp Red Pepper Flakes adjust based on spice preference
  • 1 cup Chicken Stock homemade or low sodium is ideal
  • 1 tbsp Fresh Lemon Juice lemon zest can also be added
  • 1 cup Freshly Grated Parmesan Cheese freshly grated avoids clumping
  • 1/3 cup Heavy Whipping Cream non-dairy alternatives may be used

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Trim excess fat from the chicken pieces and season with salt, paprika, and Montreal seasoning.
  3. Combine butter, red onion, parsley, garlic, and red pepper flakes in a bowl.
  4. Rub the butter mixture over the seasoned chicken and arrange in a baking dish.
  5. Pour chicken stock and lemon juice around the chicken in the dish.
  6. Sprinkle freshly grated Parmesan cheese over the top of the chicken.
  7. Bake uncovered for approximately 1 hour and 45 minutes or until fork-tender.
  8. Optionally, raise the temperature to 400°F for the last 15 minutes for crispy skin.
  9. Check for doneness with a meat thermometer; aim for 165°F.
  10. Let the chicken rest for about 5 minutes before serving.
