- Preheat your oven to 375°F (190°C).
- Trim excess fat from the chicken pieces and season with salt, paprika, and Montreal seasoning.
- Combine butter, red onion, parsley, garlic, and red pepper flakes in a bowl.
- Rub the butter mixture over the seasoned chicken and arrange in a baking dish.
- Pour chicken stock and lemon juice around the chicken in the dish.
- Sprinkle freshly grated Parmesan cheese over the top of the chicken.
- Bake uncovered for approximately 1 hour and 45 minutes or until fork-tender.
- Optionally, raise the temperature to 400°F for the last 15 minutes for crispy skin.
- Check for doneness with a meat thermometer; aim for 165°F.
- Let the chicken rest for about 5 minutes before serving.
