Tart Base
  • 6 large eggs Room temperature
  • 1 large egg beaten for egg wash
  • 1 tbsp water for egg wash
  • 1 sheet puff pastry dough thawed
  • all-purpose flour for dusting to prevent sticking
Filling
  • 2 oz Boursin cheese or substitute goat cheese
  • 3 tbsp green onion finely chopped
  • 4 slices prosciutto or substitute with bacon or lox
  • 1.5 tbsp Everything But The Bagel Seasoning
Topping
  • 2 cups arugula
  • 1 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 0.25 cup Parmigiano cheese freshly shaved

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry until it reaches around ¼ inch thick, transfer to the prepared baking sheet.
  3. Score a 1-inch border around the edges of the pastry and prick the surface with a fork.
  4. Whisk together one egg with a tablespoon of water, then brush over the pastry as an egg wash.
  5. Pre-bake the pastry for 10 minutes until just golden brown.
  6. Spread Boursin cheese evenly across the pre-baked pastry, crack the eggs on top, and sprinkle with kosher salt.
  7. Return the tart to the oven and bake for an additional 12 to 14 minutes.
  8. Top with green onions, torn prosciutto, and arugula salad drizzled with olive oil and lemon juice.
  9. Slice and serve warm, enjoying the combination of flavors.
