Step-by-Step Instructions
  1. In a medium mixing bowl, combine shredded chicken with BBQ sauce, diced red onion, and pickled jalapeños. Stir until well-coated.
  2. Butter one side of each slice of bread. In a cold skillet, place two slices butter-side down. Layer with two slices of Monterey Jack cheese, half of the BBQ chicken mixture, and two slices of cheddar cheese.
  3. Top with another slice of bread, butter-side out. Heat on medium.
  4. Cook for about 4 minutes on one side until golden brown, then flip and fry for an additional 4 minutes.
  5. Remove from skillet, let cool for a minute, then slice in half and serve immediately.
