  2. Pat the spare ribs dry, trim excess fat, and remove the silver skin.
  3. Apply 1 tablespoon of yellow mustard evenly across both sides of the ribs.
  4. Sprinkle 1.5 tablespoons of BBQ rub over the mustard-coated ribs and massage gently.
  5. Smoke the ribs in the smoker for about 2.5 hours, maintaining a temperature of 275°F.
  6. Glaze with 1.5 tablespoons of BBQ sauce and return to the smoker. Cook until internal temperature reaches 202-205°F.
  7. Wrap the ribs in foil and let them rest in a cooler for 1-2 hours before serving.
