Preparation Steps
- Preheat the oven to 375°F (190°C).
- In a saucepan, melt 1/2 cup unsalted butter and stir in 2 tablespoons espresso powder until dissolved.
- Mash 3 ripe bananas in a bowl until smooth.
- Combine the cooled butter and espresso mixture with the mashed bananas.
- Stir in 1/2 cup granulated sugar and 1/2 cup brown sugar until no granules remain.
- Add 1 beaten large egg and mix until just combined.
- In a separate bowl, whisk together 1 1/2 cups flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
- Gradually fold the dry mixture into the wet mixture until just combined.
- Gently fold in 1/2 cup chocolate chips.
- Grease a loaf pan and pour in the batter, smoothing the top.
- Bake for approximately 40 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
