  1. In a large pot, place large eggs and cover with water, bringing to a boil. Cover and remove from heat, letting sit for 12 minutes. Transfer to an ice bath for 10 minutes to cool before peeling.
  2. Carefully slice the peeled eggs in half lengthwise, pop out yolks into a bowl, and mash until smooth. Mix in mayonnaise, Dijon mustard, hot sauce, and half of the Cajun spices. Chill for 20 to 30 minutes.
  3. Toss medium shrimp in remaining Cajun spices. Heat a skillet with olive oil. Cook shrimp for 2-3 minutes on each side until pink and slightly blackened. Cool slightly.
  4. Fill each egg white half with the Cajun yolk mixture using a spoon or piping bag, creating a generous mound.
  5. Top each egg with a Cajun shrimp, add a slice of jalapeño, and sprinkle with chives for garnish.
  6. Arrange deviled eggs on a platter with lemon wedges for guests to squeeze over before serving.
