Instructions
  1. Wash and halve small heads of broccoli into bite-sized pieces. Chop the sweet dates and roasted, salted almonds.
  2. Place a large skillet over medium-high heat for 2–3 minutes. Drizzle in olive oil until it coats the bottom.
  3. Carefully add the broccoli in a single layer. Sear for about 5 minutes without stirring.
  4. Flip the broccoli to sear the other side for an additional 1–2 minutes until firm yet tender.
  5. Chop the charred broccoli into bite-sized pieces after cooling slightly.
  6. Whisk together olive oil, vinegar, honey, and salt in a mixing bowl.
  7. Toss the chopped broccoli with the dressing, and gently fold in chopped dates and almonds.
  8. Shave cheddar cheese over the top and give it a gentle toss.
  9. Serve immediately or chill to let flavors deepen.
