  • 1 Medium Yellow Onion or shallots/leeks
  • 2 cloves Garlic add more for stronger flavor

  • 1 jar Marinara Sauce 24-32 oz, opt for low-sugar varieties
For the Cheese Filling
  • 1 container Whole-Milk Ricotta Cheese 15-16 oz, look for dairy-free options
  • 8 oz Low-Moisture Mozzarella Cheese fresh mozzarella may increase liquid

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a baking dish with cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles for 7 minutes, then drain and lay flat on parchment paper.
  3. In a skillet, heat olive oil, add onion, salt, seasoning, and pepper. Cook until onions are tender. Add garlic and beef, cooking until beef is browned.
  4. Mix in marinara sauce and simmer for 5 minutes. Remove from heat.
  5. In a bowl, mix ricotta, egg, remaining salt, Parmesan, and mozzarella until creamy.
  6. Spread 1.5 cups of meat sauce in your baking dish. Roll noodles with cheese filling and meat sauce, seam-side down in the dish.
  7. Pour remaining meat sauce over roll-ups and sprinkle with mozzarella and Parmesan. Cover with foil and bake for 10 minutes.
  8. Uncover and bake for another 15-20 minutes until cheese is bubbly and golden. Optional: broil for 1-2 minutes.
  9. Let rest for 5 minutes before serving.
