Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Wash and shred two medium zucchinis, then squeeze out excess moisture.
  2. In a large mixing bowl, combine the squeezed zucchini with two large eggs, ½ cup of shredded mozzarella cheese, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix until fully combined.
  3. Transfer the mixture onto the prepared baking sheet, spreading it evenly into a rectangle about ¼ inch thick. Bake for 20-25 minutes or until golden brown and firm.
  4. Carefully remove the base from the oven and sprinkle the remaining ½ cup of mozzarella cheese on top. Return to the oven and bake for an additional 5-7 minutes until melted and bubbly.
  5. Let the Cheesy Zucchini Breadsticks cool for about 5 minutes. Cut into strips and serve with marinara or ranch dressing.

Notes
