Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. Beat together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until smooth and well-combined.
  5. Gradually fold in the dry ingredients until just combined.
  6. In a small bowl, mix together the brown sugar and cinnamon for the filling.
  7. Spread half of the cookie dough on parchment and sprinkle the filling over it.
  8. Roll the dough tightly, slice into 1-inch rounds, and place on the prepared baking sheet.
  9. Bake for 10-12 minutes until the edges are golden brown. Allow to cool for a few minutes before transferring to a wire rack.
