Baking Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Beat together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until smooth and well-combined.
- Gradually fold in the dry ingredients until just combined.
- In a small bowl, mix together the brown sugar and cinnamon for the filling.
- Spread half of the cookie dough on parchment and sprinkle the filling over it.
- Roll the dough tightly, slice into 1-inch rounds, and place on the prepared baking sheet.
- Bake for 10-12 minutes until the edges are golden brown. Allow to cool for a few minutes before transferring to a wire rack.
