Step-by-Step Instructions
  1. In a small bowl, combine warm water, yeast, and granulated sugar. Let sit for 5–10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour and salt. Make a well in the center.
  3. Pour the yeast mixture and melted butter into the well. Stir until a shaggy dough forms.
  4. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
  5. Place the dough in an oiled bowl, cover with a damp towel, and let rise for 1–1.5 hours until doubled in size.
  6. Punch down the risen dough and divide it into 8 equal pieces. Roll each into a 24-inch rope and shape into pretzels.
  7. In a pot, bring water to a boil, add baking soda, and stir to dissolve.
  8. Boil each shaped pretzel for about 30 seconds, then remove and place on a parchment-lined baking sheet.
  9. Preheat oven to 375°F (190°C). Brush boiled pretzels with beaten egg.
  10. Sprinkle the pretzels with the cinnamon-sugar topping while still wet.
  11. Bake for 12–15 minutes until golden brown.
  12. Let cool on a wire rack for a few minutes before serving.
