Step-by-Step Instructions
  1. Begin by soaking your cleaned clams in a bowl of cold water for 20 minutes.
  2. Pour in the coconut milk into a medium-sized pot and bring it to a gentle simmer over medium heat.
  3. Stir in 2 smashed stalks of lemongrass, 3 minced garlic cloves, and a tablespoon of grated ginger.
  4. Mix in 2 tablespoons of fish sauce, the juice of one lime, and salt and black pepper to taste.
  5. Gently introduce the soaked clams into the simmering broth and cover the pot with a lid.
  6. Carefully check that all clams have opened and discard any that remain closed.
