  • 1 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Step‑by‑Step Instructions for Coconut Chicken Brothy Rice
  1. In a medium pot, heat coconut oil over medium heat. Add minced garlic and grated ginger, sauté for about 3-4 minutes until fragrant.
  2. Stir in red curry paste, chicken broth, boiling water, coconut milk, fish sauce, and lime juice. Bring to a gentle simmer.
  3. Add boneless chicken thighs to the simmering broth. Cover and let simmer for about 20 minutes on low heat.
  4. Prepare jasmine rice according to package instructions in a separate pot.
  5. Once the chicken is cooked, remove it from the pot, let it rest, then slice into bite-sized strips.
  6. Serve rice in bowls, ladle broth and chicken over the top. Garnish with green onions and cilantro, serve with lime wedges.
