Coconut Base
  • 2 cups fresh ice cubes Use fresh ice for optimal consistency.
  • 1 cup full-fat coconut milk Opt for full-fat for the best results.
  • ½ cup cream of coconut Substitute with coconut milk for a lighter drink.
Peach Lemon Syrup
  • 1 cup water
  • 1 cup lemon juice
  • 1 cup sugar
  • 2 cups diced peaches Use fresh peaches for the best taste.

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine 1 cup of water, 1 cup of lemon juice, and 1 cup of sugar. Stir until the sugar has dissolved and the mixture begins to boil, which should take about 5 minutes. Once boiling, remove from heat and let it cool slightly before blending with 2 cups of diced peaches. Strain through a sieve and refrigerate until chilled.
  2. In a high-powered blender, add 2 cups of fresh ice cubes along with 1 cup of full-fat coconut milk and ½ cup of cream of coconut. Blend on high speed for about 30-45 seconds until the mixture becomes frosty and creamy.
  3. Take chilled glasses and pour the blended coconut mixture into each glass, filling them about three-quarters full. Gently drizzle the chilled peach lemon syrup over the top.
  4. Add any desired garnishes such as fresh peach slices or mint leaves for a stylish touch. Serve the slushies immediately.
