  • 1 cup Almond Flour Can substitute with oat flour.
  • 1 cup Grated Carrot Peeled or unpeeled carrots work.
  • 1/4 cup Maple Syrup/Honey Optional sweetener.
  • 1 teaspoon Vanilla Extract Opt for pure vanilla.
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon Can substitute with nutmeg or ginger.
  • 1/2 teaspoon Salt
  • 1/2 cup Chopped Walnuts/Pecans Optional, omit for nut-free.

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup or honey, and vanilla extract until smooth.
  3. Fold in the almond flour, baking powder, cinnamon, and salt, then add the grated carrot and mix until cohesive. Fold in nuts if desired.
  4. Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25–30 minutes until set and golden.
  5. Remove from oven and cool on a wire rack for at least 10 minutes before slicing.
