Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish.
- In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup or honey, and vanilla extract until smooth.
- Fold in the almond flour, baking powder, cinnamon, and salt, then add the grated carrot and mix until cohesive. Fold in nuts if desired.
- Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25–30 minutes until set and golden.
- Remove from oven and cool on a wire rack for at least 10 minutes before slicing.
