- In a large pot, pour in 4 cups of vegetable broth and add 3 tablespoons of miso paste. Stir vigorously until the miso is fully dissolved, then heat until it reaches a gentle simmer (3-5 minutes).
- Once simmering, add 1 tablespoon of minced fresh ginger and 2 cloves of minced garlic. Stir well and let it simmer for an additional 5 minutes.
- Squeeze the juice of one fresh lemon into the soup and stir. Simmer for another 5-7 minutes.
- Taste the soup, and if it needs more depth, stir in an additional teaspoon of miso or a sprinkle of salt. Simmer for another 2 minutes.
- Ladle the soup into bowls and garnish with finely sliced green onions, if desired. Serve immediately.
