Step-by-Step Instructions for SunButter Gingerbread Muffins
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners.
- In a mixing bowl, combine 1 cup of SunButter, ½ cup of molasses, 1 teaspoon of vanilla extract, and the juice and zest of one lemon until smooth.
- In a separate bowl, sift together 1 ½ cups of cassava flour, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and 1 teaspoon of ground ginger.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Evenly divide the batter among the prepared muffin cups, filling each about ¾ full.
- Place the muffin tin in the preheated oven and bake for 25 minutes.
- Once baked, allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack.
