  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with paper liners.
  2. In a mixing bowl, combine 1 cup of SunButter, ½ cup of molasses, 1 teaspoon of vanilla extract, and the juice and zest of one lemon until smooth.
  3. In a separate bowl, sift together 1 ½ cups of cassava flour, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and 1 teaspoon of ground ginger.
  4. Gradually fold the dry mixture into the wet ingredients until just combined.
  5. Evenly divide the batter among the prepared muffin cups, filling each about ¾ full.
