  • 1/2 cup Butter softened
  • 2 cups Powdered Sugar for sweetness
  • 1/2 cup Dark Brown Sugar
  • 1 teaspoon Vanilla Extract for flavor
  • 8 ounces Cream Cheese can use dairy-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 340ºF (170ºC) and prepare two 8-inch round cake pans.
  2. Sift together the dry ingredients (flour, cornstarch, spices, baking powder, baking soda, salt) in a bowl.
  3. Cream together the softened butter, granulated sugar, and dark brown sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix half of the dry ingredients into the wet mixture, then add sour cream, oil, and vanilla. Follow with the remaining dry ingredients.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 28-30 minutes or until a cake tester comes out clean.
  8. Cool the cakes in their pans for 5 minutes, then transfer to a wire rack to cool completely.
  9. Make frosting by beating butter, powdered sugar, and brown sugar until airy. Add vanilla and cream cheese, mixing until smooth.
  10. Assemble the cake by frosting between layers and the top and sides.
  11. Decorate with cinnamon dust or star anise for a beautiful finish.
