Step-by-Step Instructions
  1. Prep the garlic by roasting it in a skillet for about 10 minutes or mincing it fresh. Chop chipotle peppers in adobo sauce.
  2. In a blender, combine sour cream, mayonnaise, chipotles, garlic, lime juice, smoked paprika, cumin, and salt. Blend on high speed for 30 to 60 seconds.
  3. Taste the sauce and adjust heat, salt, and acidity as needed, blending again if adjustments are made.
  4. Check the consistency and add olive oil or water if the sauce is too thick. Blend for an additional 15 seconds.
  5. Transfer the sauce to a clean jar and chill in the refrigerator for at least 30 minutes before serving.
