- In a high-speed blender or food processor, add cottage cheese, peanut butter, sweetener, vanilla extract, and a pinch of salt if desired. Secure the lid tightly.
- Blend the mixture on high for 30 to 60 seconds or until smooth and fluffy. Stop and scrape down the sides as needed.
- If the mousse appears too thick, gently add 1 to 2 tablespoons of milk or cream and blend again.
- Transfer the mixture into a bowl and chill in the refrigerator for 15 to 20 minutes.
- Melt the dark chocolate chips with coconut oil in a microwave-safe bowl in 20-second intervals, stirring until smooth.
- Once chilled, spoon the mousse into serving bowls and drizzle the melted chocolate over the top. Optionally sprinkle with chopped peanuts.
