Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the boneless chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Stir until the chicken is thoroughly coated. Cover and marinate for at least 15 minutes.
  2. Heat a skillet over medium heat and add vegetable oil and a tablespoon of butter. Once melted, add the marinated chicken and brown for about 6-8 minutes. Remove and keep warm.
  3. In the same skillet, add another tablespoon of butter and diced onions. Sauté for 3-4 minutes until onions are translucent. Add minced garlic and sauté for another minute until golden.
  4. Pour in the tomato sauce, sugar, salt, black pepper, and cayenne pepper. Stir and bring to a simmer for about 5 minutes.
  5. Lower heat and mix in heavy cream and garam masala. Simmer for another 5 minutes until creamy.
  6. Return cooked chicken to skillet, mixing to coat. Simmer for another 5-10 minutes. Garnish with fresh parsley before serving hot with naan or steamed rice.
