  1. Start by washing a fresh cucumber thoroughly. Slice it in half lengthwise, then use a spoon to scoop out the seeds for a better texture. Dice or shred the cucumber until you have about 1 cup.
  2. In a mixing bowl, add the diced or shredded cucumber along with 1 cup of Greek yogurt. Then, toss in 2 tablespoons of chopped fresh dill and 1 tablespoon of olive oil. Add optional chopped parsley for an extra pop of color.
  3. Mince 1 clove of garlic and add it to the bowl. Squeeze in the juice of one lemon, catching any seeds. Stir well until everything is combined.
  4. Taste the tzatziki sauce and adjust garlic, salt, and pepper according to your preference.
