  • 12 oz Linguine or spaghetti or fettuccine
For the Sauce
  • 1 cup Fresh Lobster Meat or crab or shrimp
  • 2 tbsp Unsalted Butter
  • 1 tbsp Olive Oil extra virgin preferred
  • 4 cloves Garlic minced
  • 1 cup Heavy Cream or half-and-half for lighter version
  • ½ cup Grated Parmesan Cheese use high-quality
  • 2 tbsp Lemon Juice freshly squeezed
  • ½ tsp Red Pepper Flakes optional
  • to taste Salt
  • to taste Freshly Ground Black Pepper

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add linguine and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
  2. In a skillet, melt butter and olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Reduce heat to low, stir in heavy cream, Parmesan cheese, and lemon juice. Cook until the cheese has melted and the sauce is smooth, about 3-5 minutes.
  4. Add drained linguine and fresh lobster meat to the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  5. Season with salt, pepper, and red pepper flakes if desired. Serve immediately, garnished with fresh parsley.
