Step-by-Step Instructions for Creamy Mushroom Pasta Soup
- Soak the dried mushrooms in just boiled water for 10 to 15 minutes to rehydrate them. Once tender, chop and reserve soaking liquid.
- In a large saucepan, melt butter over medium heat. Add onion, soaked dried mushrooms, and fresh mushrooms. Sauté for about 15 minutes until onions are translucent.
- Stir in garlic, paprika, thyme, and dill, cooking until fragrant for around 1 minute.
- Pour in the broth and reserved mushroom soaking water, add soy sauce and Worcestershire sauce, then mix in the pasta. Bring to a boil, then reduce to simmer for 8 to 10 minutes until pasta is tender.
- Once the pasta is tender, remove from heat and stir in sour cream and grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
