  • 100 g Vegan Greek-Style Yogurt Substitute with vegan sour cream if unavailable.
  • 1 teaspoon Vanilla Extract

Step-by-Step Instructions
  1. Prepare the Passion Fruit Curd by combining passion fruit, sweetener, and thickener in a saucepan over medium heat until it thickens. Cool completely before using.
  2. Soak the cashews in cold water for 4 hours or quick-soak in boiled water for 30 minutes. Drain and rinse.
  3. Make the Cookie Crust by crushing the vegan cookies and combining with unsalted vegan butter and sea salt, then press into a lined loaf pan and chill for 30 minutes.
  4. Blend the cheesecake filling ingredients together until smooth and creamy.
  5. Pour the cheesecake filling over the chilled crust, smooth the top, cover, and refrigerate for at least 6 hours.
  6. Top with warmed passion fruit curd and spread evenly.
  7. Chill the cheesecake for an additional hour before slicing and serving.
