  1. In a high-powered blender, combine 2 cups of frozen strawberries, 1/2 cup of pineapple juice, 1/2 cup of unsweetened coconut milk, and 1 tablespoon of fresh lemon juice. Blend on high for about 30-45 seconds until creamy and smooth.
  2. Stop the blender to scrape down the sides with a spatula, ensuring everything blends evenly. Blend again for another 10-15 seconds. Taste the mixture and add up to 2 tablespoons of powdered sugar if you prefer it sweeter.
  3. Pour the Strawberry Dole Whip into bowls or cones for a soft-serve texture, or transfer to an airtight container and freeze for about 30 minutes for a firmer consistency.
