Step-By-Step Instructions
  1. In a large mixing bowl, combine cream cheese, lime juice, cayenne pepper, and chili powder. Mix until smooth.
  2. Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Drain and toss with olive oil.
  3. Grill sweet corn on medium heat until caramelized and charred. Cool and cut kernels off the cob.
  4. In the bowl with the dressing, add cooled pasta, charred corn, red onion, bell pepper, and Cotija cheese. Toss gently.
  5. Taste and adjust seasoning if needed. Serve immediately or chill for 30 minutes to enhance flavors.
