  • 1 cup fresh sweet corn grilled preferred; frozen as a substitute
  • 4 ounces cream cheese or Greek yogurt for a lighter option
  • 1/2 cup cotija cheese feta can be a substitute
  • 1 small red onion or green onions for milder flavor
  • 1 cup bell pepper any color for sweetness
  • 1/4 cup cilantro or parsley as a substitute
  • 1 tablespoon lime juice or lemon juice as an alternative
  • 1/2 teaspoon cayenne pepper to adjust heat level
  • 1/2 teaspoon chili powder to adjust heat level
  • 1 whole avocado mix in just before serving
For the Chili Butter
  • 2 tablespoons butter

Method
 

Preparation Steps
  1. In a mixing bowl, combine cream cheese with lime juice, whisk until smooth. Season with salt and pepper. Set aside.
  2. Bring a pot of salted water to boil, add pasta, and cook until al dente, about 8-10 minutes. Drain and toss with olive oil.
  3. Pour the creamy dressing over warm pasta and toss until coated.
  4. Chop sweet corn, red onion, bell pepper, and cilantro. Mix into the pasta.
  5. Cube avocado and mix in just before serving.
  6. In a skillet, melt butter and stir in cayenne and chili powder, cook until fragrant.
  7. Serve the pasta with chili butter drizzled on top, either warm or chilled.
