  • 1 cup Unsweetened Almond Milk Add more for a lighter consistency
  • 1 tbsp Coconut Oil Can substitute with vegetable stock or water
  • 1 tbsp Fresh Ginger Minced
  • 3 cloves Garlic Fresh cloves
  • 1 medium White Onion Sautéed
For the Seasoning
  • 1 tbsp Mild Chili Powder Adjust to taste
  • 1 tsp Ground Turmeric
  • 1 tsp Ground Coriander
  • 1 tsp Cumin
  • 0.5 tsp Cinnamon
  • 1 tbsp Maple Syrup Substitute with agave syrup for sugar-free
For the Main Dish
  • 1 can Diced Tomatoes Canned
  • 14 oz Firm or Extra Firm Tofu Pressed and cubed
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions for Vegan Butter Tofu
  1. Press the firm or extra-firm tofu for 20-30 minutes to eliminate excess moisture, then cut into cubes.
  2. Soak the raw cashews in boiled water for 20-30 minutes, then drain.
  3. Blend soaked cashews with unsweetened almond milk until smooth, adding more milk for desired consistency.
  4. Heat coconut oil in a skillet, add garlic, ginger, and onions. Sauté until onions are translucent.
  5. Stir in mild chili powder, turmeric, coriander, cumin, and cinnamon. Toast the spices for 1-2 minutes.
  6. Add diced tomatoes and maple syrup, then add cubed tofu. Mix and pour in the cashew blend. Simmer for about 10 minutes.
  7. Season with salt and pepper to taste. Serve over rice and garnish with fresh cilantro.
