- Pat the cod fillets dry with paper towels to remove excess moisture. Drizzle olive oil on both sides and rub in thoroughly. Let rest for 5 minutes.
- In a shallow bowl, combine Parmesan, panko, lemon zest, garlic powder, salt, and black pepper. Mix well until evenly incorporated.
- Dip each oiled fillet into the coating mixture, pressing gently to adhere. Place coated fillets on a parchment-lined plate.
- Brush the coated fillets generously with melted butter and sprinkle more lemon zest on top.
- Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes.
- Arrange the coated fillets in a single layer in the air fryer basket. Cook for 10 to 12 minutes, flipping halfway through.
- Melt any remaining butter in a small saucepan over low heat, add chopped parsley and stir briefly.
- Serve the cooked fillets on a platter, drizzle with warm parsley butter, and garnish with extra parsley and lemon wedges.
