Preparation Steps
  1. Pat the cod fillets dry with paper towels to remove excess moisture. Drizzle olive oil on both sides and rub in thoroughly. Let rest for 5 minutes.
  2. In a shallow bowl, combine Parmesan, panko, lemon zest, garlic powder, salt, and black pepper. Mix well until evenly incorporated.
  3. Dip each oiled fillet into the coating mixture, pressing gently to adhere. Place coated fillets on a parchment-lined plate.
  4. Brush the coated fillets generously with melted butter and sprinkle more lemon zest on top.
  5. Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes.
  6. Arrange the coated fillets in a single layer in the air fryer basket. Cook for 10 to 12 minutes, flipping halfway through.
  7. Melt any remaining butter in a small saucepan over low heat, add chopped parsley and stir briefly.
  8. Serve the cooked fillets on a platter, drizzle with warm parsley butter, and garnish with extra parsley and lemon wedges.
