- Press Tofu: Wrap the tofu in paper towels, place on a plate, and set a heavy object on top for 15 minutes to remove excess moisture.
- Cut Tofu: Unwrap and slice the tofu into bite-sized cubes, about 1-inch each.
- Prepare Coating: In one bowl, whisk together cornstarch and garlic powder. In another bowl, place panko breadcrumbs.
- Coat Tofu: Toss each tofu cube in the cornstarch mixture, then roll in panko breadcrumbs.
- Bake: Line a baking sheet with parchment and spread coated tofu cubes in a single layer. Bake in a preheated oven at 400°F (200°C) for 30-40 minutes, turning halfway.
- Make Sauce: In a mixing bowl, whisk together vegan mayonnaise, Sriracha, white sugar, and salt until smooth.
