  • 0.5 tsp Coriander Optional; omit if not a fan.
  • 3-4 tbsp Fat for Frying Choose healthy options like ghee or avocado oil.

Step-by-Step Instructions
  1. Finely shred the cabbage and prepare the other ingredients: grate the carrots, slice the scallions, and mince the garlic.
  2. In a large mixing bowl, combine shredded cabbage, grated carrots, sliced scallions, minced garlic, eggs, flour, sea salt, black pepper, paprika, and optional coriander. Toss until well-coated.
  3. Heat a non-stick skillet over medium-low heat and add your chosen cooking fat until shimmering.
  4. Scoop a tablespoon of mixture and form it into a patty, about ½ inch thick, and place on a plate.
  5. Carefully place fritters into the heated skillet, cooking for about 3 minutes on each side until golden brown and crispy.
  6. For baking, preheat oven to 420°F (215°C), arrange on a lined baking sheet, and bake for 20-23 minutes, flipping halfway through.
