  • 2 tablespoons tamari Can swap with soy sauce or coconut aminos
  • 1 tablespoon lemon juice Or 1 tbsp white wine vinegar
For the Coating
  • 1 cup panko breadcrumbs Plain, not seasoned
  • 1/4 cup nutritional yeast Can substitute with more breadcrumbs and spices
  • 1 tablespoon mixed herbs (sage, thyme, rosemary) Adjust to taste
  • 1/4 cup cornstarch Can use all-purpose flour if preferred
For the Wet Mix
  • 1/2 cup unsweetened almond milk Avoid oat milk
  • 1 tablespoon vinegar (apple cider or white wine)
For Extra Seasoning
  • 1 teaspoon seasoning (garlic powder)
  • 1 teaspoon paprika
  • 1 teaspoon salt Customize to taste

Method
 

Step-by-Step Instructions for Crispy Herbed Tofu
  1. Preheat your oven to 425°F (220°C) and prepare a quarter sheet pan with a drizzle of oil.
  2. Slice pressed tofu into 3-4 slabs, marinate in a mixture of tamari and lemon juice for at least 10 minutes.
  3. Set up three bowls: one with cornstarch, one with a milk and vinegar mixture, and one with herbs, breadcrumbs, nutritional yeast, garlic powder, paprika, and salt.
  4. Coat each tofu slab in cornstarch, dip into the milk mixture, and roll in the breadcrumb mixture.
  5. Arrange breaded tofu cutlets on the baking tray, spray lightly with cooking oil, and bake.
  6. Bake for 15 minutes, then flip and continue baking for an additional 5-10 minutes until golden brown.
  7. Let cool for a couple of minutes before serving immediately.
