- Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper or nonstick spray.
- In a large mixing bowl, combine the shredded cheddar cheese, mozzarella cheese, chopped dill pickles, and garlic powder. If using, add breadcrumbs too and mix thoroughly.
- Form the mixture into small balls about the size of a tablespoon and place them onto the prepared baking sheet, leaving space in between.
- Bake for 10 minutes, or until golden brown and crispy.
- Remove from the oven and allow to cool for a couple of minutes before serving with your favorite dipping sauces.

For the best texture, blot pickles dry before mixing and chill the mixture if too sticky. Store leftovers in an airtight container for up to 2 days, or freeze unbaked shaped bites for up to 3 months. Reheat in the oven at 350°F (175°C) for 5-7 minutes.
