Preparation Steps
  1. Preheat your air fryer or oven to 400°F (200°C). Toss day-old jasmine rice with sesame oil, soy sauce, and chili crisp until coated.
  2. Spread the rice onto a parchment-lined baking sheet and bake or fry until golden brown and crunchy, about 16-40 minutes, stirring halfway through.
  3. While rice cools, whisk together sesame oil, peanut butter, soy sauce, rice vinegar, lime juice, honey, chili crisp, and ginger until smooth.
  4. In a large bowl, combine cooled crispy rice with chopped veggies. Drizzle dressing over and toss gently until well-coated.
  5. Sprinkle toasted sesame seeds on top before serving to enhance crunch. Enjoy your refreshing salad!
