- Start by patting the boneless, skinless chicken breasts dry using paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the chicken breasts.
- Place the seasoned chicken breasts into the bottom of your slow cooker. Scatter the minced garlic and chopped sun-dried tomatoes evenly on top of the chicken.
- Pour the chicken broth gently around the chicken in the slow cooker. Cover the lid and set your slow cooker to LOW for 3-4 hours, or HIGH for 2-3 hours.
- Once the chicken is perfectly cooked, remove it from the slow cooker. Use two forks to shred the chicken into bite-sized pieces directly in the pot. Return the shredded chicken back into the crockpot.
- Pour the heavy cream and add the grated Parmesan cheese into the slow cooker with the shredded chicken. Stir well to combine everything evenly.
- Turn off the slow cooker and stir in the freshly chopped basil. Let the mixture sit for about 5-10 minutes to thicken slightly before serving.
