Step-by-Step Instructions
  1. Start by patting the boneless, skinless chicken breasts dry using paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the chicken breasts.
  2. Place the seasoned chicken breasts into the bottom of your slow cooker. Scatter the minced garlic and chopped sun-dried tomatoes evenly on top of the chicken.
  3. Pour the chicken broth gently around the chicken in the slow cooker. Cover the lid and set your slow cooker to LOW for 3-4 hours, or HIGH for 2-3 hours.
  4. Once the chicken is perfectly cooked, remove it from the slow cooker. Use two forks to shred the chicken into bite-sized pieces directly in the pot. Return the shredded chicken back into the crockpot.
  5. Pour the heavy cream and add the grated Parmesan cheese into the slow cooker with the shredded chicken. Stir well to combine everything evenly.
  6. Turn off the slow cooker and stir in the freshly chopped basil. Let the mixture sit for about 5-10 minutes to thicken slightly before serving.
