Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8"x8" baking pan with parchment paper.
  2. Melt unsalted butter and chopped semi-sweet chocolate together in a microwave-safe bowl.
  3. Stir in granulated sugar and light brown sugar until combined, creating a glossy mixture.
  4. Add in vanilla extract and large eggs, whisking until fully incorporated.
  5. Fold in all-purpose flour, cocoa powder, espresso powder, and fine sea salt.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes.
  7. Prepare the ganache by pouring simmering heavy cream over chopped semi-sweet chocolate and stirring until smooth.
  8. Once cooled, cut brownies into 1.5-1.75 inch circles using a cookie cutter.
  9. Whip the cooled ganache until light and fluffy using an electric mixer.
  10. Generously pipe or spread the whipped ganache onto each brownie bite.
