Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F) and line a small baking tray with baking paper, greasing the sides.
  2. Melt the unsalted butter in a medium saucepan over low heat. Stir in soy milk, sugar, and vanilla extract until combined. Add 150g of dairy-free chocolate and stir until completely melted and smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, and salt.
  4. Pour the melted chocolate mixture into the bowl with dry ingredients and gently fold until there are no visible streaks.
  5. Transfer the batter into the prepared baking tray and bake for about 20 minutes until the top is crackly and the center is soft.
  6. Allow brownies to cool completely in the tray before preparing ganache.
  7. Melt the remaining dark chocolate in a saucepan over low heat. Mix in the creamy peanut butter until velvety.
  8. Pour the peanut ganache over the cooled brownies, spread evenly, and refrigerate for at least 1 hour to set.
