Method
 

Step-by-Step Instructions
  1. In a small saucepan, gently heat peanut butter and honey over medium-low heat, stirring for 3-5 minutes until combined.
  2. Remove from heat and let cool for 1-2 minutes, then stir in oats until fully coated.
  3. Divide the oat mixture into muffin pan, pressing firmly to form bases.
  4. Melt dark chocolate chips and coconut oil in the saucepan over low heat, stirring until smooth.
  5. Spoon the melted chocolate over each oat cup, spreading evenly.
  6. Place the muffin pan in the freezer for at least 1 hour to firm up the chocolate.
  7. Once chilled, pop the cups out of the pan and sprinkle with sea salt if desired.
