Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Carefully separate the kataifi strands and toss them with melted unsalted butter. Bake for 12-15 minutes until golden brown and crispy. Let cool completely.
  2. Melt white chocolate in a microwave-safe bowl in 30-second intervals, stirring to ensure a smooth consistency. Add the pistachio butter and salt, mixing until creamy. Adjust thickness with vegetable oil if needed.
  3. Finely chop the cooled kataifi and fold it into the pistachio filling until evenly distributed without over-mixing.
  4. Form walnut-sized balls from the mixture and refrigerate for about 30 minutes to firm up.
  5. Melt dark chocolate until smooth. Temper for a glossy finish if desired.
  6. Dip each chilled ball in the melted chocolate, tapping off excess, then sprinkle with chopped pistachios while still wet.
  7. Allow the balls to set at room temperature for 30 minutes or refrigerate for 15 minutes until firm.
