- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or non-stick spray.
- In a large mixing bowl, beat 1 cup of softened butter with 1 ½ cups of granulated sugar until light and fluffy, about 3-4 minutes.
- Add 3 large eggs and 1 tablespoon of vanilla extract to the mixture. Mix on low speed until fully combined and smooth.
- In a separate bowl, whisk together 2 ½ cups of all-purpose flour, 1 tablespoon of cornstarch, 1 tablespoon of baking powder, and ½ teaspoon of kosher salt.
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with 1 cup of milk.
- Fold in 1 cup of mini chocolate chips and 1 cup of crushed Chips Ahoy cookies into the batter.
- Pour the batter evenly into the prepared cake pans and bake for 28-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.
- Prepare buttercream icing by beating softened butter, powdered sugar, and a splash of heavy cream. Frost between the layers and on top of the cake.
