Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, salt, and optional nutmeg.
- In a separate bowl, mash overripe bananas, then stir in finely shredded carrots, sweetener, milk, oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and fold them together gently.
- Transfer the batter into the prepared loaf pan, smoothing the top. Tap the pan to remove air pockets.
- Bake for about 45 minutes, checking for doneness with a toothpick.
- Remove from oven and let cool in the pan for 10 minutes before transferring to a wire rack.
- Optional: Frost with coconut butter or vegan cream cheese frosting if desired.
