Preparation Steps
  1. Toss the thawed shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper in a mixing bowl and let marinate for about 10 minutes.
  2. Prepare the corn salsa by mixing thawed corn, diced red onion, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt and let sit for 5 minutes.
  3. Preheat grill to medium heat (350°F/175°C) and grill shrimp for 2-3 minutes on each side until opaque.
  4. In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and pepper until smooth to create the sauce.
  5. Assemble the bowl by placing corn salsa in serving bowls, topping with grilled shrimp and avocado, drizzling with sauce, and garnishing with sesame seeds and green onions.
