  • 0.25 cups Maple Syrup
  • a pinch Salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it with coconut oil and lining the bottom with parchment paper.
  2. In a large mixing bowl, combine grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract. Mix until fully incorporated.
  3. In a separate bowl, whisk together oat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
  4. Gradually fold the dry mixture into the wet ingredients using a spatula.
  5. Pour the batter into the greased and lined baking pan and bake for 20-25 minutes.
  6. Remove the cake from the oven and let it cool in the pan for 30 minutes, then transfer to a wire rack.
  7. Prepare the frosting by mixing Neufchatel cheese, Greek yogurt, maple syrup, and salt until smooth.
  8. Frost the cooled cake with the Neufchatel frosting and serve.
