Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it with coconut oil and lining the bottom with parchment paper.
- In a large mixing bowl, combine grated carrots, eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract. Mix until fully incorporated.
