Ingredients
  

For the Salad
  • 4 medium beets canned or pre-cooked beets can be used
  • 1 medium red onion or omit if desired
  • 4 oz goat cheese feta cheese is a great substitute
  • 1 cup walnuts can be replaced with sunflower seeds for a nut-free option
  • 1/4 cup cilantro or parsley as a substitute
For the Dressing
  • 1/4 cup rice wine vinegar or apple cider vinegar for substitution
  • 1 medium lime juice
  • 1/4 cup orange juice or more lime juice for a different flavor
  • 1 clove garlic minced
  • 1 tbsp fresh ginger grated, ground ginger can work in a pinch
  • 1 tbsp sugar or honey/agave syrup as a natural sweetener
  • to taste salt
For Garnishing
  • 2 tbsp sesame seeds or omitted for nut-free diets

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash the beets and wrap them in foil on a baking sheet. Roast for about 45–60 minutes until fork-tender, or boil for 30-40 minutes.
  2. In a bowl, mix rice wine vinegar, lime juice, orange juice, minced garlic, grated ginger, sugar, and salt. Whisk until well combined.
  3. In a skillet, heat oil and sauté sliced onions for 5-7 minutes until translucent and slightly golden.
  4. In a large bowl, combine sliced beets and sautéed onions. Drizzle with dressing and toss gently to coat.
  5. Transfer to a serving platter and sprinkle with sesame seeds and cilantro before serving.

Notes
