  • 2 tablespoons apple cider vinegar/red wine vinegar any mild vinegar can substitute well
  • salt & black pepper adjust according to your taste
  • 1 clove garlic minced or grated; garlic powder is an easy substitute
  • dried or fresh thyme omit if not on hand
Salad Ingredients
  • 4 cups mixed greens any favorite salad greens will do
  • 1 cup mandarin oranges fresh or canned (drained) is perfect
  • 1/2 cup candied pecans/lightly toasted pecans walnuts or almonds are great substitutes
  • 1 cup avocados diced; omit for a lighter dish
  • 1/2 cup pomegranate seeds/dried cranberries swap with raisins or other dried fruits
  • 1/3 cup feta cheese crumbled; substitute with vegan feta or omit for dairy-free
  • 1/4 cup shallots/red onion sliced; green onions can serve as a suitable alternative

Method
 

Prepare Dressing
  1. In a medium mixing bowl, whisk together the freshly squeezed orange juice, orange zest, and olive oil until emulsified. Then add the Dijon mustard, honey, and vinegar. Incorporate minced garlic, thyme, salt, and black pepper to taste. The dressing should be well combined and smooth.
Assemble Salad
  1. In a large serving bowl, combine mixed greens as the base. Add in the segmented mandarin oranges, diced avocados, and candied pecans. Toss in pomegranate seeds and crumbled feta cheese, followed by sliced shallots.
Dress Salad
