Ingredients
  

Steak Marinade
  • 1 pound Sirloin Steak can substitute with flank or ribeye
  • 2 tablespoons Olive Oil avocado oil for high-heat cooking
  • 3 cloves Garlic minced; fresh is best
  • 2 tablespoons Lemon Juice lime juice can substitute
  • 1 teaspoon Dried Oregano fresh herbs can be used
  • 1 teaspoon Dried Thyme fresh herbs can be used
  • to taste Salt
  • to taste Black Pepper
Base
  • 2 cups Cooked Grains brown rice, quinoa or cauliflower rice
  • 1 can Roasted Chickpeas optional
Fresh Toppings
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber diced
  • 1/2 medium Red Onion sliced
  • 1/2 cup Kalamata Olives pitted
  • 1/2 cup Feta Cheese omit for dairy-free
  • 1/4 cup Fresh Herbs parsley or dill
Tzatziki Sauce
  • 1 cup Greek Yogurt coconut yogurt for dairy-free
  • 1/2 medium Grated Cucumber remove excess moisture
  • 2 tablespoons Fresh Dill or mint
  • 1 teaspoon Honey omit for Whole30
Vinaigrette
  • 3 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice or apple cider vinegar

Method
 

Instructions
  1. In a mixing bowl, combine olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Add the steak, cover, and refrigerate for at least 30 minutes.
  2. Mix Greek yogurt, grated cucumber, minced garlic, dill, and a pinch of salt in a bowl to create the tzatziki. Chill in the fridge for at least 15 minutes.
  3. Whisk olive oil, lemon juice, salt, and pepper in a small bowl to create the vinaigrette. Set aside.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side. Let it rest for 5 minutes before slicing.
  5. Warm cooked grains in the microwave or stovetop and layer them in serving bowls.
  6. Layer sliced steak on grains, add toppings like tomatoes, cucumber, onion, olives, and feta. Drizzle with tzatziki and vinaigrette, finishing with fresh herbs.
  7. Serve immediately with pita bread or salad if desired.
